For a Rosemary Garlic Frenched Lamb Rack simply begin by rubbing a mixture of extra virgin olive oil, minced garlic, finely chopped flat leaf parsley, finely chopped rosemary, salt and ground pepper.
Preheat grill and sear lamb over direct high heat, turning occasionally until browned all over. Move lamb to indirect heat placing bone side down and brush with mixture while turning occasionally, until a temperature of 115 degrees F is achieved at center of loin.
Transfer lamb rack to a cutting board and let stand for 2 minutes. Slice between bones and assess desired doneness, should you prefer a more crisp and charred chop simply return to grill over direct heat.
